Apples!



We went apple picking yesterday and picked 5 bushels of apples. That's a lot of apples!! I plan on giving them to friends & family, making unsweetened apple sauce, and just eating lots of apples as snacks. :)

Single Pie Crust


This recipe is for 1 single crust pie. I use this when I make an apple crumb pie or quiche. I also have a recipe for a Double-Crust pie. This is from the Better Homes & Gardens cookbook.

1 1/4 cups all-purpose flour
1/4 tsp salt
1/3 cup unsalted butter or shortening
4-5 Tbs cold water

1. Stir together flour & salt. Cut in shortening until pieces are pea size.

2. Sprinkle 1 tablespoon of the water over part of the flour mixture; mix with a fork. Push moistened dough aside and repeat until the flour mixture is moistened. Form into a ball.

3. On a lightly floured surface, roll the dough out from center to edges to form a 12" circle.

4. Transfer to pie plate. Trim edges to 1/2 inch beyond the edge of pie plate. Fold under and crimp the edges as you desire. Here's a picture of how I do it.


I normally like to pre-bake my bottom pie crust for just a little because I've had it not cook through before during the normal pie baking time and it's not very yummy. So I just cover the edges in foil, lightly prick the bottom with a fork and bake it for about 7-10 minutes.

Quiche



Homemade quiche with broccoli - from our garden of course. :)

First make the pie crust.

Next, put it in the pie plate, cover the edges with aluminum foil (so they don't burn), prick the bottom lightly with a fork and bake it at 375F for 10 minutes or so.

After the crust is done baking, put 1 1/2 cups of shredded cheese on the bottom of crust. I use whatever cheese is in my house. This time I used some cheddar & parmesan.

Whisk together 5 eggs (until no egg white streaks show) and 1 cup of milk or cream. Add 1/2 cup onion, 1/2 tsp salt and 1/4 tsp black pepper. I also added basil because I love basil and it adds a bit more flavor. You could also add chives or any other herb you wanted.

You can bake it like that or you can make some additions. You could add mushrooms, tomatoes, bacon, spinach, broccoli, shredded zucchini, etc....really any veggie you want to put in. I used broccoli since Derrick just brought me some from the garden. The total addition should be 1 1/2 cups.

Bake at 375F for 35-40 minutes, a knife inserted in the center should come out clean.

Pie crust
1 1/2 cups shredded cheese (any kind you prefer)
5 eggs
1/2 cup onion
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp basil, chives, etc (optional)
1 1/2 cups of veggies or bacon

Pizza Sauce

Homemade Coleslaw

Coleslaw made with fresh green cabbage, red cabbage, red onion & carrots all grown in our garden.




This is my grandmom's recipe for coleslaw (or potato salad) dressing. Of course I think it's the best. :) It makes enough for 6 people with leftovers.
Coleslaw Dressing:
Mix 2 1/4 tsp mustard
4 1/2 tsp vinegar
3/4 cup mayonnaise
Salt & Sugar to taste (I put in a few shakes of salt & a pinch of sugar. Basically you just want a pinch of sugar so it counters the vinegar a little bit.)
Coleslaw Veggies: You may have extra dressing so keep adding more veggies until you have the consistancy you want.
4 1/2 cups green cabbage, finely chopped
2 cup red cabbage (or green cabbage), finely chopped
2 cup shredded carrots
1/2 cup thinly sliced red onion
